That's not strictly true, if you unfold it after each fold you can fold it in half many more times than 7. Pick up a newspaper, fold in half, open it to read it, fold in half again, open to read it, repeat until you get bored ;)

The number of consecutive folds in half without unfolding could be around that number though ;)
