Just replacing my antirollbar links - what's the best way?
Do I take off the wheels?

What will happen if I take the existing link off? (Pieces falling off all around me!!!!)

i take it u mean the links on the ends of the arb's so all you need to do is undo the bolts that hold them in place nothing will fall apart or fall on you.
trouble is i have use of a ramp ay work so i can lift the whole car and do it the easy way.

Just don't jack one wheel at a time to do it - there'll then be too much pressure on one side to undo the nuts. So use ramps for something.

I drove around for a few days with just a single front AR link. No problem...
