I have read some posts suggesting that Prodrve settings toa standard carwould improve the handling.

What exactly does this mean, is this changes to the geometry of the suspension and if so will the dealers perform this?

When people talk about using the Prodrive settings they mean changing the suspension geometry to the settings recommended by Prodrive, as you correctly guessed. Check the FAQ for information on the settings.

Forgot to mention: dealers with 4-wheel alignment gear, or any other outfit with similar kit, should be able to make the adjustments for you.
