Just booked in my scoob for 45k service. They told me the MY00 now does not need a new cambelt until 60k? Is this subaru trying to extend the service intervals and am I right to demand a new cambelt anyway? How much £ roughly am I looking at for the service?

cambelt change on it's own is roughly £200 - there's quite a few threads on cambelt changes, particularly for the MY00 onwards cars - try a search

There was a policy change at IM, been through this myself, i have a MY99 and the garage even insisted this was 60K. Confirmed with IM and

MY99=45000
MY00=60000
The parts used are exactly the same, opinion on here, is to have it done at 45000 for safety, it's much cheaper than a new engine if the belt let's go.
You won't have much change from £450.00

Thanks. Have now phoned them and asked for cambelt as well. Best be on the safe side than a sump full of nuts and bolts:)
