Buttermilk pancakes with bacon and maple syrup for brunch.

Flat4, I'm in a country where Carnival is a national holiday, it's not easy to miss. Unlike in the UK. I thought people appreciate the reminder.

On a more serious note, anyone got any good recipes for batter?
I usually just guestimate when I make it, but that way sometimes the proportion of eggs, flour, milk is a bit out. Is there a "perfect" ratio?
