Could an EJ257 be relinered (with thicker liners) as is, while taking a small drop in capacity?
I see that the way to get a strong 2.5 at the moment is to use a 2.2 block as a base....but could what im talking about be a viable option?
Is this theoretically possible? i.e. reduce the bore size and hone the pistons to suit? maybe down to 2.45? or similar?
Im thinking outloud here is all......

Yep, currently considering it, as i have an 257 here with some scores to a cylinder.
If it's possible, i'll be sticking with drop in 257 pistons once it's been linered, as i believe, if anything were to happen and the bores were scored again, there should still be enough meat on them to hone them out for some over-sized pistons.
I don't believe it's worth having a smaller bore with a relinered 257, as the 2.5 is just too good to give up.
