Default Which Head Gasket? any advice?

Hello

I have a spare engine which I am in the process of stripping to replace all the seals and gaskets.

Which type of head gasket should I go for? I have seen various types such as fibre and graphite facing any recommendations?

I wasn't planning on replacing all the internals but is there anything I must replace whilst I have the engine out?
