Theres loads, head for the area of town called "The Lanes" and you'll find them everywhere 
If you end up with Italian, my personal advice would be to avoid Donatello's, which is one of the bigger restaurants - its normally packed and they rush you a bit to free the table up....

My GF lives in Brighton. Do you want an upmarket restaurant? Topolino's Italian is very nice and reasonable although it is more Hove way. Tend to see the odd celeb in here as well

Correct about Donatello unless you're a lone male or with a male friend then you can perv at the waitresses.
If you can stomach the idea of vegetarian food (personally I find the idea of excluding meat abhorrent) then terre a terre is actually quite good. I enjoyed the food but could only imagine how good it would be if they actually cooked everything.

sadly as I don't live there anymore lots of the places I used to frequent have no closed down and my knowledge is limited to watch Gordon Ramsey's excursions to places like
Momma Cherri's Soul Food Shack who went bust on 28/12/07 but who re-open this Saturday the 5th. Could be worth a visit just to see what happens. Kitchen nightmares!!!!
he also sorted out a fish specialist on St James St called 'Loves'

Could be worth a punt and it's always a laugh up that end of town.
lol@recommendation of Topolino near George Street. It's not the worst but it is full of scummers (ie estate agents, property developers etc and D list celebs.)

If you want a great burger in a 50's style diner then try Woodies.
