Question garage fitting time for a clutch?

is there some kinda reference guide that garages use to judge job times?
either way, how many hours should fitting a clutch in a classic wrx ?

The book time is just over 5 hours to change a clutch

5 hrs take it that includes an hour for lunch

can take a hour to get the box off the engine if the dowels are corroded in
unless you are a rive *** ba##ard of course
