Preparing a 95 wrx import at mo', what brake disks calipers and pads would give the best performance??

Also anyone know where I would get a Hydraulic handbrake kit???

depends on a number of things not least the "class" you are running your car in and budget??...............
if grpN then you have to use the 4pot caliper/294mm disc for best results and to comply with the regs..........if not then a good set of AP/Alcon front and rear would be the thing...............

the other factor is wheels you are intending to use and also surface..............
