How important is the break in, really?
Ok I was told not to exceed 3500 rpm for the first 1000 miles. Is that even possible? Please someone tell me I dont have to baby foot it for 1000 miles because I am ready to see what my baby can do.

It's up yo you, but if it was me I would, as I what to make sure my car lasts! - just think of the pleasure you will get once to do get to see what it will do!
I took the view that both the manual and garage told me to run it in so I did (both imprezas). If I didnt need to run it in then why tell me to and print it in the handbook ?
Its also very very bad to labour the engine. Like going up a steep hill at 10mph in 5th gear this put a massive load on th engine which isnt good at any time.
Just drive it sensibly and follow the running in instructions and ignore the guy who will tell you to nail it from day one and it will be a better car. Unless of course he is prepared to sign a contract that says when your engine needs rebuilding/replacing he will pay for it
