Question

I am thinking of changing the exhaust downpipe for a decatted straight through on my MY 2000 sti v. I intend to leave the centre and back sections. Has anyone done this and if so have you had any problems? If I am commiting a cardinal sin and asking for trouble please feel free to let me know as I have my flame proof suit on.

Eh? If it's an STi version 5, it's an MY99 car. The STI version 6 is the MY00 version

There's no reason why this shouldn't result in a useful improvement in breathing, giving better turbo spool and more power throughout the rev band. Make sure you get a good open-neck DP to maximise the benefits.

Be aware though that you'll need to refit the catted downpipe at MOT time, unless you know a compliant tester.

Potential downsides are a leaning of the mixture, possibly leading to detonation. However, if you're already taking the precautions you should be taking (Use of Super Unleaded/Optimax plus octane booster, and a KnockLink), you shouldn't run into any problems.
