Default CV joint boot replacement / refurb, ditto for track rod

I'm refurbing all my suspension etc, and have the driveshafts off , just wondering how to go about replacing the torn rubber on one side, and also how to get the rust off (can i shot blast / powder coat these?)
same for the track rods, i want to get the whole bar done rather than just the track rod ends, but i dont know whats under the boot on the inside!

on a 98 classic jdm sti

Ash i use one of these, which come in some of the kits so no need to buy separately.

I normally just cut the rest off, you may want to do it last thing after you have cleaned all the rust off and painted.

anyone know anything about how to get the steering(track) rods off? i dont know whats under the gaiter
