Honours degree in mechanical and electrical engineering. Should be capable of soldering a loom!!!

LOL...a degree......I'm impressed....NOT.
What's your practical experience? With car looms?
As for me, altering looms to fit an alternator instead of a dynamo, fitting and integrating auxiliary wiring looms for rally lighting, extra instrumentation and an ammeter, (in the days when extra instruments came with virtually zero instructions), extra wiring for ICE, (when most cheap cars didn't even HAVE a radio, let alone speakers), and replacing half a loom on a burnt out part when a "bodged" wiring job on a mate's car went horribly wrong.

What you have described there is pretty basic operations to be fair. You haven't re invented the wheel I'm afraid. But I respect you have experience so well done for that.

May I wade in here?
I wouldn't recommend modifying an old Impreza engine loom. I see a fair few through the workshop and they usually have brittle insulation, especially at the connectors, and even worse when the engine has been in/out and the connectors ineptly detached.
Don't strip the loom to lose "unnecessary wires" as it is a lot of work for little benefit.
Your best bet is to remake it completely, omitting what you dont need (purge solenoid, for example) and adding in what you would like to improve (newage coilpack conversion, for example).
Use new wire, new terminals and seals, but you can usually reuse the connector shells.
No solder joints.
We do this regularly to breath new life in to 15-20 year old engine looms.
It's not expensive (compared to an engine rebuild).

Good advice given by very experienced members in this field of expertise.
I don't have a degree but it does make sense that a full custom loom rebuild is the best option. Why create a weak point in the loom by chopping even if it's a well done weak point?

I have done this a few times by remaking the loom from scratch. I'm an electrical retard but if you do it methodically its not too bad. Buy good quality bits though as its not worth skimping on. My basic steps were;
Label all connectors.
Remove engine loom from car and lay it out to reference from.
Lay out new wiring (of correct spec obviously) lengthening, shortening or repositioning runs as needed.
Tape up loom roughly and lay in car to check fit.
Fit new connectors or buy a set of pin pushers and reuse old ones where required.
Tape up loom with a good quality loom tape.
Fit and admire.

I was spoken to like it as an idiot who knew nothing. Really didn't get stroppy did I... Pretty sure that happens in a playground.
I haven't got on to do what I first wanted to do, due to the fact I have changed my plans. And as you well know it's going to be a totally different project.

Pretty sure I didn't exactly throw abuse. I was spoken to like it as an idiot who knew nothing. Really didn't get stroppy did I... Pretty sure that happens in a playground. Afraid not, I work away 5 days a week and had a lot of other things to do over the weekends.

It's a bit of a pain, cars been sat for about 5 weeks with nothing done to it. Once I have all the bits I need I'll orobable take a few days off work

Mine has been parked for a few months now waiting to get a new turbo, injectors, struts, drop links, brakes blah blah so I decided to take two weeks off work to get it all done. I got absolutely nothing done, didn't even get to see the car let alone work on it!
