we moved into our italian farmhouse just over 6 months ago and the bathroom stinks. italians do not fit stink pipes and i can only think this is the problem. we are about to refit our bathroom, we will have to replace all the pipes as italians recess all sewage waste into the walls and they are connected straight into the septic, which we have already replaced, am i right in thinking i can put the 100mm sewage pipe out of the wall with the sink wastes connected into it and then a T section with the waste going down into the septic and the other section going up to the roof line with a cage on top. we will fit traps on the bath and sinks, am i missing anything? i don't want to do it and then still have the disgusting stench in my nice new bathroom, plus the fact the italians think their system is the only way to plumb a bathroom.

sounds about right. Just make sure every pipe has some sort of trap on the end except for the vent above the roof line.

the pipe you;re referring to is called a soil and vent pipe (SVP) or soil stack. HTH

Continental systems often have NO air inlet pipe above the point where the toilet empties.
This causes problems in that when a toilet flushes, or the bath is emptied, for example, the rush of water causes a partial vacuum in the other traps, and can empty them, (suck the water out of the trap).
This then allows the smell from the open trap to enter the room.
Continental systems sometimes use an air admittance valve ABOVE the entry point of the toilet/sink/bathtraps, which is a sort of flap valve that opens when a vacuum occurs, and allows air into the pipe to avoid the suction on the traps/loo.
This, in turn, avoids having to pierce the roof/wall for a stink pipe.
Check also, the STATE of any traps: are they particularly dirty? if so, clean or replace. Look for any leaks while checking.
Check the state of any joints including the one after the loo and where it joins the main sewer down pipe. Installers sometimes forget to introduce glue to the joints with the seepage comes a smell.
