I'll be taking my Canon 300D with me and was wanting to get some good photos of the motors etc in action.
I'm a total amature really with the camera, if I select the sport mode is this going to be enought to capture the cars, or am I going to have to manually edit the shutter speed etc..?
If so, what's a good setting for a beginner?
Cheers!

Sport mode will probably freeze the car, which is not always what you want for motorsport.
I would use Av mode, setting shutter speed to around 1/250 or 1/320 and raising the iso from 100 until I get an f stop of around f8
What lens are you using?
If there isn't enought light, raise the iso further and/or drop the f-stop to a smaller number.

Cheers. I am using the lens that came with the camera when new. I think it's an 18mm-35mm or something...?

18-55 probably isn't going to be a lot of good I'm afraid. You'll probably need something in the 70-300 range so the cars fill a decent proportion of the frame.
Sigma 70-300 APO version is a good budget buy.

Cheers for the advice, I'll have a shop around for the new lense.

I wouldn't bother with sports mode, it'll just freeze everything and let's face it, Wales will be cold enough! :D
I tend to use Tv mode and go for around 1/160 - 1/250 or thereabouts with up to 1 stop of + exposure compensation, depending on the light :)
Your 18-55 will be OK if you can get close. I'd recommend the 75-300 if you're on a budget or the 70-200 F4L if you're feeling flush. If you're really flush, the 70-200 F2.8 L IS
