Default Thermostat ?

If a thermostat is shot will the temp gauge read anything at all. Mine just goes straight up as far as it will go even in the cold weather. Car is running ok.

Sounds like your temp sensor is shot to me..Take the cap off and Earth it,(Put a bit of wire in it and attach it to the body) If the guage goes to the top like before it's your sensor....!

But knowing me I've just typed a load of horse's ****....!

If the thermostat is stuck closed then the car will run hot and the fans will be on all the time, if its stuck open then it will run cold. check the temp sender that may be the problem if its running normal.
Get it sorted as soon as , you dont want to run the risk of a cooked engine.
You can test the thermostat in a pan of water on a cooking ring with a thermometer, the thermostate will open as the water reaches boiling point and then close again as it cools. If you can find the opening temp of a scooby thermostate usually around 85oc then check its opening temp with the thermometer.
Hope this helps.
