We are having an extension built onto the back of the house and it will have an open roof rather than a flat, artexed ceiling. I really fancy some sort of funky lighting rather than the usual wall lights etc. Anyone got any suggestions of suppliers or websites that do hidden/changing colours type stuff?

What you could do is get a chippy to place a "shelf" around the roof at ceiling height and hide soft blue lighting above it... will just give the impression of a blue glow up into the rafters :) You could even hide lights behind rafters at strategic points to give directional light too. In the main room stick to lamps and possibly even concealed under small elevations for furniture by having overhangs on the elevations :)
