I want to protect the paintwork of my STi7 (Stonechips etc.) What's the best solution?

Don't drive it!!

I dont think anything protects from stonechips. There is something called Diamondbrite which will add a layer of protection over the paint and protect it from bird lime, uv rays, oxidation and general road grime.
